mozzarella and pesto grilled cheese sandwich recipe

Ingredients

  • 2 slices rustic Italian bread
  • 1 tablespoon pesto
  • 1 slice mozzarella
  • 1/2 teaspoon extra-virgin olive oil

Instructions

  1. Spread both bread slices with pesto, add the mozzarella and close the sandwich.
  2. Grease a small pan with olive oil.

  3. Cook the sandwich, covered and medium/low heat, about two minutes per side, or until the mozzarella melts.

Serve and devour hot.
