Brie burger recipe with mustard, honey and caramelized shallots.
First delicious hamburger of the gourmet burger project: a brie burger for melted cheese lovers.
The wonderful book I’m getting most of my inspiration from (Hamburger Gourmet) has been on my shelf since June, when I bought it in Barcelona. It’s funny because the book was originally written in French, I bought the Spanish translation and now I’m writing the recipes both in English and Italian. (I feel very fancy and international at the moment).

Ingredients
- 2 buns
- 2 plain hamburgers
- 2 big slices brie cheese
- 4 tablespoons good quality mustard
- 1,8 oz breadcrumbs 50 gr
- 1 shallot
- 2 oz honey 60 gr
- 2 tablespoons extra virgin olive oil.
Instructions

Preheat oven to 180°C. Coarsely chop the shallot and place it in a small pot together with honey. Cook, on a low heat for about 2 minutes. Set aside.

Coarsely dice the brie slices and use an oiled cookie cutter to give them a rounded shape by pressing down the cheese with your fingertips. This is optional, it’s just about aesthetics.

Once you have the discs (or have decided to use the cheese slices as they are) spread them with mustard, bread them with breadcrumbs and place them on a baking sheet, lined with parchment paper. Bake them in the oven for about 5 minutes.

Meantime heat the olive oil in a large pan and pan fry the hamburgers.

Grill the buns, sliced, 2 minutes. Spread some mustard on both sides of the bun; add the burger, the cheese and the shallot sauce. I also garnished it with some arugula leaves.

If you are not serving your burgers immediately, keep the oven turned on and heat the whole burgers for a minute, just before serving.
Remember cooking times for regular burgers (125 gr):
- Almost raw: 2 minutes x side
- Red: 3 minutes x side
- Done: 4 minutes x side
- Well Done: 5 minutes per side
